S: Morel spring rolls w/ a winter salad, shallots, garlic & rice wine vinegar
D: Mushroom ragout w/ braised dandelion greens, onion, cream & cognac- CHOPPED
M: Noodle salad w/ greens, morels, orange juice & vinegar

Entree: Etrog, golden beets, wheatgrass & tempeh


S: Curry-roasted tempeh w/ heirloom tomatoes, beet puree, olive oil, coriander & ginger- CHOPPED
R: Steak spice tempeh w/ marinated beets, Italian salsa verde, salt, pepper, caraway seed & black sesame
M: Asian saute tempeh w/ frisee salad, candied beets, scallions, ginger, soy, sesame & garlic

FOR $10K: Cranberries, green tea powder, edamame & local honey

R: Edamame turnovers w/ cranberry sauce, green tea powder, vegan butter & shortening
M: Merlot cranberry sauce w/ candied yams, sugar & ginger- RICH GOT RICHER
